Recipe Review

As promised, I’m beginning a new series, Recipe Review.  I have a large selection of recipes that I want to try, but just never get around to actually executing…can you relate?  I’m hopeful that a new series will help motivate me to add some new favorites to our family repertoire and I hope you’ll join me in the journey.  I’m looking for easy, kid friendly recipes with a dose of healthy.  Please contact me if you’d like me to try out one of your favorites.

I’m using the Ziplist app and it made shopping a total snap.  I clipped the recipe this week from Martha Stewart Everyday Food and used the app on my iPhone in the store to make certain I had all of the ingredients.  If you don’t have this app yet, please check out my review of it and then go give it a try.  I want to be clear this is a Martha Stewart recipe and not mine, so I’ve included a link to it below and you can get the recipe directly from her site.

This week I made Chicken Tenders Parmesan with Broccoli and Penne with a few minor tweaks.  First, I dipped the chicken in milk instead of egg before coating with breadcrumbs because my youngest has an egg allergy.  Second, the broccoli at the market looked fabulous so I went with fresh instead of frozen.  Third, I used the whole grain penne pasta.

Now for the review:  No brainer.  Easy to make, inexpensive and a crowd pleaser.  As my 8 year old said, “how can you go wrong with cheese and red sauce?”    The chicken remains very tender and the veggies are an easy bonus.  I would definitely make this again and it is an easy weeknight fix because we usually have all of these ingredients on hand.

I’m beginning a new series where I find and review applications that might be useful for organizing your home or business.  Please let me know if you have any applications that you’d like me to try and always feel free to comment if you’ve used an application that I’ve featured and you have further input.

Today I’m featuring Capture ‘n Go, a service that will organize receipts, business cards and more.  The app is free up to 50 receipts and 50 business cards per month.  Here are the steps for using this application;

1.  Utilize the camera in your smartphone to snap a picture of either a receipt or business card.

2.  After approving the picture, follow the prompts to customize and categorize the receipt and/or business card.

3.  Accept the photo and then wait a few minutes for Capture ‘n Go to process.

4.  Log into your account and the information is ready for you to view.

I must say it was very easy to use and I was pretty amazed at how quickly and accurately everything processed.  Once in your account you can download the business cards to a vcard or create expense reports from your receipts.  So far I’m impressed and I can think of many ways this can simplify processes for me and for some of my clients.

When my husband and I first moved to Suburbia, we were inundated with solicitors. I was able to look past all of the siding and window people, but when a man came to our door with a truckload full of meat, I was intrigued.

We were sold except for one minor detail: we had no freezer space for said meat. My husband did some of the most amazing Tetris-like maneuvering and we fit it all in the freezer, but then and there he declared we needed a chest freezer. A week later we were proud owners of a new storage freezer.

Recently I cleaned out said freezer and was slightly horrified to discover some of that initial truck meat. We moved three years ago.

So I set about to create a system I like to call “No Meat Left Behind.” I created an inventory system for what goes in and out of the freezer. To keep it simple, I made it handwritten, but am considering typing it to make it look prettier.

Here’s what I did:

  1. Pulled out all the meat and catalogued by type.
  2. Made a list of everything I had and then put slash marks by it. For example “Chicken Breasts: III” so that it is easy to cross off when I take something out, and equally easy to add.
  3. Placed like types on the same side of the freezer (e.g., all poultry together, all beef together).
  4. Put all other items together: vegetables, ice cream, and cheese. Placed them in the smaller basket of the freezer.
  5. Taped list to the freezer and put marker on shelf behind.

In addition to making sure we eat everything in a timely manner, I love that when I am feeling frazzled about what to make for dinner, there is a list right there of what’s available, versus me digging for inspiration.

So, what did I do with that meat? Made my favorite sweet potato cottage pie.

1 ¼ LB sweet potatoes, peeled and cut into 1” pieces

½ C. fat-free milk

1 TBSP. butter

¾ tsp. salt

¼ tsp ground black pepper

1 LB ground sirloin

1 onion, chopped

1 C. frozen peas and carrots

½ tsp. dried thyme

½ C. reduced sodium beef broth

¼ C. red wine

¼ C. tomato paste

Instructions:

Preheat oven to 350. Coat a 6-cup ovenproof casserole dish with cooking spray and set aside. In a small pot, combine the potatoes with enough water to cover by 3”. Bring to a boil and cook for 10 to 12 minutes, or until tender. Drain the potatoes, return to the pot, and add the milk, butter, ¼ tsp of the salt, and 1/8 tsp of the pepper. Mash until smooth and set aside.

Heat a nonstick skillet over medium-high heat. Add the sirloin and cook for 5 to 6 minutes, stirring occasionally, until browned. Drain the fat from the pan and transfer the beef to a bowl. Return the skillet to the heat and add the onion, peas, and carrots, and thyme. Cook, stirring occasionally, for 5 to 7 minutes, or until the vegetables are soft.

Return the beef to the skillet and stir in the broth, wine, and tomato paste. Cook for 2 to 3 minutes, or until the liquid is almost evaporated. Stir in the remaining ½ tsp salt and 1/8 tsp pepper. Transfer the beef mixture to the prepared casserole dish. Spread the reserved sweet potatoes evenly over the top of the beef.

Bake for 25 to 30 minutes, or until the potatoes are lightly browned

Savory Solutions

Welcome to the third installment of Savory Solutions.  This new series will  introduce you to smart, creative and interesting women that either blog or own their own business.  You’ll read about a new organizing tip and you’ll find a new and tasty recipe to try out.  I’m looking for bloggers and business owners that would like to guest post for this series, please contact me if you are interested.

I have been blessed in life to have so many sisters and nieces.  So, When I had my own daughter I was able to obtain a lot of “hand me downs” from their children.  I have several years of clothes for my daughter from 12mos until 3T.  I became overwhelmed when bags and bags of clothes were given to me.  I thought “where in the world am I going to put all this stuff?”  Organizing the 12months – 3T clothes was daunting.  One day I just took out 2 hours of my time and got organizing.  My favorite things to save for this job are all the children’s trouser/skirt hangers that come with new clothes from the stores.  The steps I took helped me save closet and drawer space.  I am not rummaging through so much clothes to find her an outfit for the day.

1. I laid out all the outfits on the floor in order of size
2. I then laid out all non-outfits of the same size (example: 12mos shirts in one pile, 12mos jeans in another pile)
3. If clothes were off season for her size I would place in a box to be given away.
5. I then only hung outfits in the order I laid them out
6. The non-outfits were then folded and laid in drawers in the same order.  The top drawer would be clothes of her current size, the second would be the next size and so forth.

This kind of work requires some food that provides hearty energy.  One of my favorite easy go to meals is baked spaghetti.  Here is what you will need:
1Lb of whole wheat spaghetti
1Lb of lean ground beef
2 Jars of spaghetti sauce
1/2 Block of 2% Velveeta cheese
1 Large bag of 2% cheddar cheese

Preheat oven to 375 degrees.  Cook spaghetti as directed, drain, and let sit.  Brown beef in a large pot, add in spaghetti sauce, and the cooked noodles.  Stir ingredients on medium high heat.  Break off into small pieces the 1/2 block of Velveeta cheese and drop into pot.  Continuing stirring until cheese has completed melted and mixed into sauce.  In a 9×13 baking dish pour spaghetti mixture and spread evenly.  Top off the spaghetti with the cheddar cheese making sure to cover the entire dish.  Bake for 30 minutes.

Some of you have been following me since I started blogging about a year ago.  If so, you may remember that I did a series of posts last year around the Holidays about clutter-free gift giving.  I urged you to really consider the recipient and then give gifts that were meaningful and useful.  Last year I provided you with a few tips and then a few examples such as the Digital Frame, Bon Appétit Basket and  Tell-Tale Tote.

I’d like to challenge all of you again this year to put thought behind your gifts and to put a little of yourself into what you give.  What do I mean by this?  I’ve really been focused on teaching by example in my home.  Is a gift something that you run out out and quickly pick-up at a store, or is a gift an expression of your feelings, love and gratitude?   Especially at this time of year, I urge you to make your gift something useful and special. If you have kids, make them a part of the process.

My first idea this year is something that will take a little time and planning, so we’ve already started.  P.S – if you know my Mom, don’t spoil it!  The girls and I are making a recipe book.  I’ve selected a handful of recipes that we make together or that are our family favorites.  I’m arranging them with photos of the girls and quotes they’ve made about cooking and eating.  The quotes are fun and I know family members will get a kick out of it.  Some examples are – “cheese makes everything better” and “two little girls in a kitchen = fun and a big mess”.  By the way, that was NOT my quote.  Sites such as Shutterfly and Snapfish make a project such as this very easy to navigate.  I feel like this gift meets the clutter-free and thoughtful threshold for a number of reasons, but the most important detail is that my kids are involved.

Savvy Spenders – Back to School

We are making a grand effort at our home to cut back where we can and question whether or not we really need what we are about to buy.  Through a new series, Savvy Spenders, I’m trying to teach my oldest daughter some lessons about responsible consumerism.  Thankfully we are not forced to be making these choices.  However, I really want my kids to learn the importance of spending wisely because someday they will benefit from the lesson.  The instant gratification of the $5.00 toy should make way for college savings or donations to the local food pantry.

I recently put our new focus to the test during back to school shopping.  My first step was to go online and find coupons for clothing stores.  I told Sophia that we were only going to shop at those stores.  I had a 40% off for Justice, a $10.00 off for JCPenny and a fantastic Groupon for the Gap equal to $25.00.  We made a point of finding sale items whenever possible while still allowing Sophia to select items that she liked and would wear.  Our total savings including coupons and sale items was roughly $150.00.  The greater lesson here is that Sophia is beginning to look at what things cost and thinking about what she really needs.

I asked Sophia if there is anything she’d like to share about our shopping day today and she said, “even if you have to shop with coupons, you can still find things that you like to wear”.  She also said that, “back to school shopping is really fun”.

I’ve been writing a series of posts on clutter-free gift giving and hope to inspire all of you to put some thought and creativity into your gifts. Challenge yourself to consider if your giving really reflects the recipient and whether or not the gift will really enhance their lives, or just add to the clutter.

For this post I’d like you to consider gifts that can actually “give back” either by supporting the community or the environment.

Jewelry with a purpose. If you have girlfriends on your shopping list, consider Project Have Hope. The women of Acholi make beautiful, colorful jewelry and revenue from the sales is used to fund educational and economic programs. Along the same lines with a higher price tag, there is Build a Nest.

Shop local. I’m fortunate enough to live in a community that has a strong local shopping district. Wellesley, MA offers many local merchants mixed with larger more well known stores. The Gifted Hand  highlights local artisans or independent toy stores like Magic Beans give me the chance to support my community as well as small business owners.

Oxfam America. What could be more creative than buying a sheep for one of your friends? Your donation allows impoverished women to create their own income.

Gift your talents. Be kind to the environment and give of yourself no packaging, or waste involved! Can you donate your time or talent to friends? Possibly you are good with finances and you can donate your time to help a friend that needs guidance. Can you cook a meal? Clean a home? Wash a car? Help with lawn maintenance? Give your friend or family member a coupon for your services and your creativity will certainly be appreciated.
